Tenha cuidado para não processar demais, pois a castanha começa a soltar gordura.&lt;br /&gt;Arrume a massa em um pirex, pressionando para ficar com uma espessura um pouco maior que 0,5cm e leve à geladeira. Deve ficar bem ralo. Adoce bem.&lt;br /&gt;Prepare agora a mistura para passar o pão antes de fritar: em um recipiente junte três colheres de farinha com água bem gelada. Adicione a água aos poucos, para formar um creme um pouco espesso. Para manter a consistência, coloque o recipiente do creme sobre água bem gelada, de preferência com gelo.&lt;br /&gt;Comece então a fritar as rabanadas: pré-aqueça o óleo, passe o pão no leite de coco diluído (sem deixar mergulhado por muito tempo, pois o pão pode desmanchar), esprema ligeiramente o pão entre as mãos, passe no creme de farinha e coloque na frigideira para fritar até ficar dourado.&lt;br /&gt;Escorra em papel absorvente e passe em açúcar e canela. Enrole bolinhas pequenas, colocando em tabuleiro untado com óleo e polvilhado com farinha e achatando-as com um garfo (passado na farinha para não grudar nas bolinhas). Pode-se também esticar a massa com rolo e utilizar cortador de biscoitos em formatos variados. Acrescente o óleo vegetal. Dilua o fermento na água morna e acrescente aos poucos à mistura com a farinha, mexendo bem. Comece a sovar a massa, acrescentando farinha até a massa ficar lisa e homogênea. Deixe crescer por duas horas, em tigela coberta, em local protegido. Após este tempo, distribua a massa no formato desejado em formas de pão ou tabuleiros untados com óleo e polvilhados com farinha. Se for utilizar formas de pão, ocupe a forma até 1/3 da altura. Aguarde crescer até dobrar de volume (cerca de 30 minutos). Em uma tigela, coloque meio quilo da farinha e acrescente a água aos poucos, misturando bem. Vá acrescentando o restante do quilo da farinha. Comece então a sovar a massa, adicionando mais farinha até obter uma massa lisa e homogênea. Deixe a massa descansar por duas horas em local protegido. Após este tempo, divida a massa nas formas ou nos tabuleiros untados com óleo e polvilhados com farinha, dando o formato desejado, e aguarde dobrar de volume (cerca de 30 minutos). Leve ao forno baixo (180 graus), pré aquecido, por 40 minutos. Na parte de baixo do forno coloque uma travessa com água quente e a mantenha com água durante todo o tempo que os pães levarem para assar. O meu é este, adaptado de uma outra receita.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;Ingredientes:&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;- 2 xícaras de lentilha cozida;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;- 1 xícara de aveia em flocos finos;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;- 1/2 xícara de germen de trigo;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;- 1/2 cebola ralada;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;- sal a gosto;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;- farinha de trigo;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;- óleo para fritar.&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;Modo de fazer:&lt;/span&gt;&lt;br /&gt;&lt;span style="font-family:arial;"&gt;Misture bem, amassando com as mãos, os cinco primeiros ingredientes. Na verdade, o sabor característico do pão de queijo é do polvilho azedo, e não do queijo.&lt;br /&gt;&lt;br /&gt;- 1 colher de sopa rasa de fermento em pó&lt;br /&gt;- 4 xícaras de chá cheias de polvilho doce&lt;br /&gt;- 1 xícara de chá cheia de polvilho azedo&lt;br /&gt;- 3 batatas ou mandioquinhas médias (cerca de 400g) cozidas, descascadas e espremidas (tipo purê)&lt;br /&gt;- 1/3 de xícara de chá de óleo bem quente (ponto de fritura)&lt;br /&gt;- 1 xícara de água bem quente&lt;br /&gt;- Sal a gosto (cerca de 1 colher de sopa cheia)&lt;br /&gt;- Tofu amassado, cerca de 2 xícaras&lt;br /&gt;&lt;br /&gt;Misture os polvilhos e o sal. Junte o óleo bem quente e depois acrescente os demais ingredientes e sove. Despreze a água e cozinhe em panela de pressão por uma hora. Escorra a água do cozimento e triture o grão-de-bico com o azeite utilizando um mixer ou o liquidificador. Acrescente o azeite aos poucos até ficar na consistência desejada. Adicione sal a gosto. Dependendo da consistência do grão-de-bico, pode ser necessário adicionar mais azeite. Guarde em pote tampado na geladeira - dura cerca de 5 dias.
